{"id":1634,"date":"2026-05-08T11:29:54","date_gmt":"2026-05-08T09:29:54","guid":{"rendered":"https:\/\/tubardeconfianza.com\/?p=1634"},"modified":"2026-05-08T11:31:42","modified_gmt":"2026-05-08T09:31:42","slug":"salpicon-de-marisco-de-pulpo-en-el-pollo","status":"publish","type":"post","link":"https:\/\/tubardeconfianza.com\/en\/salpicon-de-marisco-de-pulpo-en-el-pollo\/","title":{"rendered":"Salpic\u00f3n de marisco de pulpo en El Pollo"},"content":{"rendered":"<p class=\"wp-block-paragraph\">Hay platos que no empiezan con una receta.<br>Empiezan con una idea.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En nuestra versi\u00f3n del salpic\u00f3n de marisco, un cl\u00e1sico imprescindible de cualquier barra fr\u00eda, no partimos de la tradici\u00f3n como norma r\u00edgida, sino como punto de partida.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Quer\u00edamos trabajar el pulpo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Y a partir de ah\u00ed, todo lo dem\u00e1s vino casi solo.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cocinar por colores<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">A veces, cocinar no es pensar en ingredientes, sino en sensaciones.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En este caso, el punto de partida fue el color del pulpo: profundo, intenso, con ese tono entre violeta y rojo oscuro tan reconocible.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ese color nos llev\u00f3 directamente a construir el plato alrededor de \u00e9l.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">No desde el sabor primero, sino desde la armon\u00eda visual y luego el equilibrio gustativo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Y funciona.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Los ingredientes<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">A partir de esa base, fuimos afinando los contrastes:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Aceituna kalamata \u2192 profundidad y amargor elegante<\/li>\n\n\n\n<li>Cebolla roja \u2192 frescor y punto crudo<\/li>\n\n\n\n<li>Pepinillo encurtido \u2192 acidez y tensi\u00f3n<\/li>\n\n\n\n<li>Alcaparras \u2192 salinidad y car\u00e1cter<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Cada ingrediente est\u00e1 ah\u00ed por una raz\u00f3n clara.<br>Ninguno es decorativo.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El objetivo no era reinterpretar el salpic\u00f3n.<br>Era llevarlo a nuestro lenguaje.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">El resultado<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un plato fresco, directo, con tensi\u00f3n equilibrada entre acidez, sal y textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">El pulpo manda.<br>El resto acompa\u00f1a.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">No hay capas innecesarias.<br>No hay salsas que escondan.<br>No hay artificio.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Solo producto bien pensado.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Una idea simple<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cocinar por colores puede parecer un gesto est\u00e9tico.<br>Pero en realidad es una forma de ordenar decisiones.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cuando el color gu\u00eda, el plato se simplifica.<br>Y cuando el plato se simplifica, el sabor aparece con m\u00e1s claridad.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">En mesa<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Es un plato que funciona especialmente bien en barra fr\u00eda o como entrante compartido.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fresco, ligero, pero con car\u00e1cter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De esos que desaparecen r\u00e1pido.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A veces, las mejores ideas no vienen de complicarlo todo m\u00e1s, sino de mirar el producto de otra forma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">En este caso, literalmente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cocinar por colores siempre funciona.<\/strong><\/p>","protected":false},"excerpt":{"rendered":"<p>Hay platos que no empiezan con una receta.Empiezan con una idea.
